I don't like to cook very much but looove to bake. Cheese empanadas are my favorite and they're the item I contribute to pretty much every single gathering we attend:
3 eggs
4 tbsp sugar
½ tsp salt
½ cup milk
2 cups shreded Monterrey Jack cheese (or any kind)
2 ¼ cups flour
2 tsp baking powder
5 tbsp butter flavor Crisco
Separate 2 egg whites and mix until peaks form. Combine with cheese. Set aside.
Mix 2 egg yolks plus 1 egg with sugar and salt for 2 minutes. Add milk and mix a bit more. Set 2 tsp aside.
Combine flour with baking powder. Add Crisco and work it into the flour with hands until well incorporated.
Add egg mixture to flour mixture to form a workable dough. Add flour if needed. Make about 35 smalll balls (about walnut size).
Flour rolling pin, hands and working surface. Roll a ball of dough into a flat oval about 5"x3". Place a tsp of cheese in center, fold and seal egdes. Repeat for all.
Place them on baking sheet, moisten top with egg mixture seta aside earlier and sprinkle with sugar.
Bake at 325 preheated oven for 15-20 minutes or until golden.
